Spanish Tapas
It has been stated in the tradition of Spain, that the story of Tapas was invented during the reign of King Alfonso X, when he had suffered from a very terrible illness. After the king had regained health, he had ordered that whenever a drink was served, it would be accompanied by a small snack called a "Tapa". Another story goes that the people of Spain would use pieces of bread to cover their drinks from unwanted fruit flies.

Lettuce and Chicken Rolls
This is absolutely healthy and delicious!
Ingredients:
4 Butter Lettuce Leaves, washed and dried
4 Radicchio Leaves, washed and dried
2 Firm, Ripe Tomatoes , halved
50g Fresh Ricotta Cheese
Sea-Salt Flakes and Freshly Ground Pepper
2 Tbsp Pine Nuts, toasted
1 Tbsp Olive Oil
1 Tbsp Lemon Juice
1/2 Tsp Hot Mustard
Pinch Caster Sugar
8 Iceberg Lettuce Leaves, washed and dried
8 Large Slices of Smoked Chicken
Method:
1. Shred butter lettuce and radicchio leaves and set aside. Remove core from tomatoes, cut into 1cm cubes, then put in a medium bowl. Crumble over ricotta, season with salt and pepper, then toss.
2. Put Olive Oil, lemon juice, mustard and sugar in a screw-top jar and season with salt and pepper. Secure lid and shake well. Pour half over tomato mixture and toss. Toss through pine nuts.
3. Lay iceberg leaves on a clean bench top and cover with a slice of chicken. Evenly top with lettuce, radicchio and tomato mixture, then roll up. Secure with toothpicks. Arrange on a platter and drizzle over remaining dressing.
