Grilled Ratatouille




This is my easy and healthy recipe. It is extremely, delicious and I know you will love it.

Ingredients:

1 Eggplant (Cut into chunks)
3 Zucchini (Cut in half crosswise)
2 Red Onions ( Cut into 16 pieces)
5 Cloves of Garlic with skin (make a small incision)
1 Large Red Bell Pepper
1 Large Yellow Bell Pepper
10 Button Mushrooms (If big, cut in half)
1/2 Tsp of Dried Rosemary, Oregano, Basil
Season with freshly ground pepper and salt
2 Tbsp Aged Balsmaic Vinegar
5 Tbs Extra Virgin Olive Oil
Method:

1. Combine all ingredients, tossing to coat vegetables.
2. Grill vegetables, uncovered over high heat until tender.
