Farro, the Great Grain


As ancient grains go, farro is a great one, cultivated and eaten since ancient Egypt, high in iron and a perfect protein when combined with legumes.

. Contrary to popular misconception, Farro (Triticum dicoccum) is not spelt (Triticum spelta), as their names prove. They are also cooked differently. Farro must be soaked overnight before cooking and is chewy, nutty and slightly crunchy. Spelt doesn't need soaking and cooks up soft like barley.

. Farro is most commonly added to soups and salads, but it can also be the primary ingredient of a salad or served as a hot side dish.

. Iron- Rich Kale is a classic match for Farro. To prepare kale, remove stems, coarsely chop and blanch until leaves soften but are still rich, fresh green. Add to the soup at the same time as the farro. A beautiful finish is a tiny drizzle of extra-virgin olive oil and a sprinkle of grated Parmesan.

As a salad: Combine cooked farro, kale and any or all of these, diced celery, carrots. sweet peppers, halved grape tomatoes, chopped parsley and mint, lemon zest, currants, olives, nuts. Dress like a salad with oil and freshly squeezed lemon juice. Make in large batches; it's doubly delicious the next day.

As a side dish: Heat olive oil, fresh ground balck pepper, a clove of garlic and a pinch of cracked chiles in a large, deep frying pan. Add cooked farro and kale, stirring to coat them evenly with oil and heat through. Finish with a splash of apple cider vinegar, toasted pine nuts and finely chopped fresh thyme.
