Haricot Bean Salad



Simple and superb!!!

Ingredients:

2 Cup Cooked Haricot Beans (Or you can use canned Haricot beans)
A punnet of Cherry Tomatoes (Halved)
1 Red Onion (Julienne)
1 Yellow Bell Pepper (Sliced)
1 Bunch Parsley (Chopped)
1 Red Chilli (De-seeded and Chopped)

Dressing:

5 Tbs Extra Virgin Olive Oil
1 Tsp Dijon Mustard
3 Garlic Cloves (Minced)
Juice of One Lemon
2 Tbs Apple Cider Vinegar
Salt and Freshly Ground Pepper

. Put all these in a dressing bottle and shake thoroughly.

Method:

1. Wash the Haricot beans with hot water to remove the prservatives.

2. Mix all the ingredients and toss the dressing.

Enjoy!!
