This simple and healthy recipe, is divine!!
(Serving for 4 people)
Ingredients:
2 cups of Kidney Beans
2 Spring Onions (chopped)
2 Medium-sized Tomatoes (Diced)
2 Lebanese Cucumbers (Diced)
1 Small Bunch, Italian Parsley (Chopped)
1 Small Red Chili (Two, if you like it fiesty!!) (Diced)
Dressing:
1 / 4 Cup Olive Oil
2 Cloves of Garlic (Minced)
Juice of 1 Lemon
2 Tbs Apple Cider Vinegar
Salt and Pepper
Method:
1. Mix all ingredients together.
2. Mix thoroughly dressing ingredients.
3. Toss the dressing to ingredients and mix together.
